Preventing Bacillus cereus Contamination in the Food Industry

Bacillus cereus contamination remains a major food safety risk across the food industry. In fact, Bacillus cereus toxins are among the most commonly reported causes of foodborne outbreaks in the European Union according to EFSA (EU One Health Zoonoses Report 2023).

What are B. cereus?

Bacillus cereus is a Gram-positive, rod-shaped, spore-forming bacterium widely distributed in the environment. Due to its ubiquitous nature, it can contaminate a wide range of food products, including dairy products, rice, vegetables, spices, and ready-to-eat meals.

A key feature of B. cereus is its ability to form highly resistant spores, which can survive pasteurization and other food processing treatments. Under favorable conditions, these spores can germinate and proliferate, leading to high bacterial counts in food products. Furthermore, the bacterium can persist in food production environments through biofilm formation, increasing the risk of recurring contamination.

The pathogenicity of B. cereus is mainly associated with the production of two types of toxins responsible for distinct clinical syndromes:

  • Emetic toxin (cereulide): a heat-stable toxin pre-formed in food, causing rapid-onset vomiting (typically within 0.5 to 6 hours after ingestion).
  • Diarrheal enterotoxins: produced in the intestine after ingestion of viable cells, leading to diarrhea and abdominal pain.

Why is the monitoring of Bacillus cereus a key concern?

From a public health perspective, Bacillus cereus represents a recurrent cause of foodborne outbreaks. In France, it accounts for approximately 9–16% of confirmed foodborne outbreaks, highlighting its significant contribution to the overall foodborne disease burden.

A recent crisis in the infant formula market related to B. cereus toxins further illustrates the potential severity of this pathogen. The event started at the end of 2025, leading to more than 60 countries initiated recalls of infant formula products following the detection of cereulide toxin in certain batches. The root cause was identified as upstream contamination originating from a shared raw material (arachidonic acid – ARA oil).

This event had serious public health consequences, with several infants affected, including three reported deaths in France.

Such crisis highlight the need for faster, more comprehensive detection and monitoring strategies.
