What is Salmonella?

Salmonella is a genus of Gram‑negative, rod‑shaped bacteria belonging to the family Enterobacteriaceae. It comprises two main species, Salmonella enterica and Salmonella bongori, with S. enterica representing the primary species associated with human disease. 

The genus includes more than 2,500 serotypes (or serovars), defined based on somatic (O) and flagellar (H) antigens. However, only a limited number of serotypes (such as S. Enteritidis and S. Typhimurium) are responsible for the majority of foodborne infections worldwide.​

Salmonella is recognized as a major zoonotic foodborne pathogen and a leading cause of gastroenteritis globally, transmitted through the consumption of contaminated food or water along the farm‑to‑fork continuum. Salmonella infections (salmonellosis) typically manifest as self‑limiting gastrointestinal illness but can also lead to more severe systemic infections, particularly in vulnerable populations.​

A key challenge in controlling Salmonella lies in its ability to survive under diverse environmental conditions. The pathogen can persist for extended periods in low‑moisture environments and exhibits increased resistance to stress factors such as heat, contributing to its persistence in food processing environments and production chains.
